Introduction

Nasi Kuning Banjar is a traditional dish from Banjarmasin, South Kalimantan. Unlike other variations of nasi kuning in Indonesia, this dish is often served with a special side of haruan (snakehead fish) or ayam masak habang (chicken in red sauce). The fragrant turmeric-infused rice is cooked in coconut milk and complemented by a variety of delicious accompaniments.

Ingredients

For the Rice:

  • 2 cups jasmine rice
  • 400 ml coconut milk
  • 200 ml water
  • 1 tsp turmeric powder
  • 2 bay leaves
  • 2 kaffir lime leaves
  • 1 lemongrass stalk, bruised
  • 1 tsp salt

For the Side Dishes:

  • 500 g snakehead fish (or chicken, as an alternative)
  • 3 hard-boiled eggs
  • 1 tbsp tamarind paste
  • 2 tbsp sweet soy sauce
  • 2 tbsp cooking oil

Spice Paste:

  • 6 shallots
  • 4 garlic cloves
  • 2 red chilies
  • 1 tsp coriander seeds
  • 1/2 tsp turmeric powder
  • 1 tsp galangal, grated

Instructions

Cooking the Rice:

  1. Rinse the rice until the water runs clear, then drain.
  2. In a pot, combine rice, coconut milk, water, turmeric powder, bay leaves, kaffir lime leaves, lemongrass, and salt.
  3. Cook over low heat, stirring occasionally, until the rice is fully cooked and fragrant.

Preparing the Snakehead Fish or Chicken:

  1. Blend the spice paste ingredients into a smooth mixture.
  2. Heat oil in a pan, then sauté the spice paste until fragrant.
  3. Add the fish or chicken and stir well.
  4. Pour in tamarind paste and sweet soy sauce, letting the mixture coat the protein evenly.
  5. Cook until the fish or chicken is fully tender and the flavors meld.

Serving:

  1. Place the golden turmeric rice on a plate.
  2. Top with the cooked fish or chicken and hard-boiled eggs.
  3. Optionally, serve with fried shallots and sambal for extra flavor.

Tips

  • Use fresh turmeric root instead of powder for a more authentic taste.
  • For extra richness, add pandan leaves while cooking the rice.
  • Serve with kerupuk (crackers) for added texture.
