  • 2 tbsp vegetable oil (for frying noodles)

For the Condiments:

  • 2 green onions, finely chopped
  • 2 tbsp fried shallots
  • 1 lime, cut into wedges
  • 1-2 bird’s eye chilies, sliced (optional)
  • Sweet soy sauce (kecap manis), to taste
  • Sambal chili paste (optional)

  • Choy sum or bok choy, blanched
  • Fried wonton crackers
  • Pickled vegetables

Instructions

Step 1: Prepare the Chicken Topping

  1. In a bowl, marinate the chicken slices with soy sauce, oyster sauce, sesame oil, sugar, garlic, salt, and pepper. Let it sit for at least 15 minutes.
